Yummy, yummy, in my tummy! This Tilapia recipe was super easy to make and not for the faint of heart. It definitely has a kick to it but the best part is you can make it as spicy as you want. Personally, the amount of spice the recipe called for was a little to much for me so keep that in mind as you make it.
Tomatoes and Pepper Relish Tilapia Recipe
- 2 lb. cherry tomatoes, halved
- 10 cloves garlic, minced
- 1 lb yellow and orange peppers, sliced
- 2 jalapenos, sliced
- 4 Tbsp olive oil
- salt & pepper
- 4 tilapia fillets
- 1 cup cilantro, chopped
- Heat oven to 425ºF. On a large baking sheet, gently toss the tomatoes, garlic, pepper, and jalapenos with 3 Tbsp olive oil and salt & pepper. Roast until tomatoes begin to break down, 15 – 20 minutes.
- With 5 minutes remaining, heat 1 Tbsp of oil in a pan over medium heat. Season tilapia with salt & pepper and cook until opaque throughout, 1 – 2 minutes per side. Toss the veggies with cilantro and serve over fish.
See wasn’t that super easy! My jalapenos were home garden grown so they may be stronger than store bought jalapenos. I only used one in the recipe and my mouth was on fire! Even my boyfriend could not handle it – LOL! It’s better to start small and work your heat up. Nothing more unattractive than inedible food.
